It contacted T-Mobile and gave me an option for either the $5 500 MB plan or the $10 unlimited plan. Perhaps Apple has a similar way of using the phone or the watch to request a service plan from T-Mobile.

I have used it with Sprint, Verizon and T-Mobile and I was never required to have a phone # or a special calling plan. My watch is completely absent of any carrier branding.
