I followed Metal Daze's link and then did a hard reset of my Xbox One (might only need to close/quit 360 emulation, even). When I launched back into 360 emulation, it pulled down my updated profile without issue.

You do not need a working Xbox live gold account to play offline whilst using emulation. I believe if you go to create new account, it should give you the option to create a guest, then just click add guest.
